• 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 2 red peppers, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1/2 tablespoon cayenne pepper
  • 1 tin of light coconut milk
  • 500ml chicken broth
  • 1 cooked deli chicken or 2 cooked chicken breasts
  • 1 pack of noodles (of your choice, I used ramen)
  • handful of chopped coriander

  1. In a large pot heat the olive oil over medium heat and add the red pepper, onion, and carrot. Cook for about 6 minutes until the ingredients are tender.
  2. Add the garlic and cook/stir for 1 minute
  3. Add the curry powder and cayenne pepper and stir through
  4. Pour over the coconut milk and chicken broth and bring to a simmer
  5. Add the shredded chicken and noodles. Cook until the noodles are done
  6. Serve with some coriander. Enjoy!
