Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 2 red peppers, chopped
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 1/2 tablespoon cayenne pepper
- 1 tin of light coconut milk
- 500ml chicken broth
- 1 cooked deli chicken or 2 cooked chicken breasts
- 1 pack of noodles (of your choice, I used ramen)
- handful of chopped coriander
Instructions
- In a large pot heat the olive oil over medium heat and add the red pepper, onion, and carrot. Cook for about 6 minutes until the ingredients are tender.
- Add the garlic and cook/stir for 1 minute
- Add the curry powder and cayenne pepper and stir through
- Pour over the coconut milk and chicken broth and bring to a simmer
- Add the shredded chicken and noodles. Cook until the noodles are done
- Serve with some coriander. Enjoy!
